Grape pressing is among the most significant operation in the processing of grapes; accordingly, the pressing should be adjusted to the characteristics of grapes and the type of wine to be produced. The characteristics of grapes to be observed include: the sort, the degree of ripeness, the grape-to-stalk mass ratio, and any contamination with diseases.

During the pressing process, fractions of must obtained differ significantly in physical and chemical properties. By incorporating or elimination of different fractions, the wine maker may influence, to a high degree, the final character of wine. A further option is the refining and processing of individual fractions.

Thus, it is important to consider what wine style (fruity young wine, wine for aging,) and type (sparkling wine, rose,) is to be produced. Only then can the pressing parameters be determined: pressure and duration of different pressing stages and duration of relaxation stage.

PNEUMATIC PRESS
Pneumatic press is a technical-oenological aid allowing controlled grapes pressing process. It allows the wine-maker to actively intervene in the processes in the course of pressing, to continually adjust and govern the processes. Soft pressing of grapes or lees by means of a membrane and compressed air prevents mechanical damaging of grapes (less damage to the hard parts of grapes) and in turn minimizes the leaching of undesired ingredients.

Technical characteristics:
- All the components to come in contact with must are made of stainless steel EN 1.4301 to allow easy cleaning and attaining high hygienic standards;

- The press drum is constructed according to pressure vessel guidelines (PED 97/23/EG). The horizontal shape of the drum, combining large length and small diameter, allows faster outflow of juice, which results in less sediment in the must;

- Large hatch (the dimensions and number differ among the press types) allow fast and easy filling and emptying of the press;
Automatics-controller allows accurate flow of the pressing process in accordance with the set parameters.
